Cumin-Spiked Roasted Sweet Potato Fries


If you're having burgers, the obvious accompaniment is fries. I figured as long as I was trying out the Easy Bean Burgers recipe from Veggie Burgers Every Which Way, I might as well try out one of the sides as well. With fall's arrival, I'm excited to gobble up winter squash, apples, and sweet potatoes. Luckily for me, Veggie Burgers Every Which Way also had an amazing recipe for sweet potato fries. This is the best sweet potato fry recipe I've found to date. The complex flavors of the garam masala and smoky cumin create a complex, but not overpowering, flavor palate that perfectly complements the sweet potatoes.

Cumin-Spiked Roasted Sweet Potato Fries
from Veggie Burgers Every Which Way by Lukas Volger
makes 4 servings

3 large sweet potatoes
2 t. potato starch or cornstarch
1.5 t. garam masala
1 t. ground cumin
3 T. olive oil
Salt

1. Preheat the oven to 450 degrees F. Lightly grease a large baking sheet.

2. Scrub the potatoes and let dry. Cut into 1/4-inch matchsticks.

3. Combine the potato starch, garam masala, and cumin, and toss with the potatoes. Add the olive oil and 1 teaspoon salt and toss.

4. Spread the potatoes on the prepared baking sheet. Bake, flipping twice, for 25 to 30 minutes, until crispy on the outside and tender on the inside. Remove with a metal spatula and toss with additional salt to taste.
