Strawberry Ice Cream


I bought 6 quarts of strawberries at the farmer's market last Saturday, 1 quart of which was specifically for strawberry ice cream. I'm trying to make the most of all-too-short strawberry season and homemade ice cream is one of my favorite things in the world. This recipe couldn't be simpler, but is absolutely divine.

Strawberry Ice Cream
from The Joy of Cooking

1 quart strawberries, hulled and sliced
3/4 c. sugar
1 t. vanilla
2 c. heavy cream
1 c. whole milk

1. Combine strawberries, sugar, and vanilla in a food processor. Pulse 2 to 3 times, just until the fruit is crushed. Transfer to a bowl and refrigerate for 1 hour.

2. Add heavy cream and milk. Stir until sugar is dissolved, 2 to 3 minutes. Pour into an ice cream maker and freeze as directed.
